Today I did some baking in preparation for our annual church picnic tomorrow. I am using this opportunity to make some new recipes of things that I've wanted to try, but are really not very healthy, so I haven't made them yet.
I made a big crock pot of baked beans first. It smells good now, and I'm sure it will be good after I'm done cooking it tomorrow.
Second, I made Irish Cream Brownies. The bottom layer is a brownie, then there is a layer of fluffy whipped filling with chunks of andes mint in it, and on top is a chocolate glaze. When making the filling, I decided to follow the recipe exactly, which meant whipping the cream until soft peaks, adding the melted white chocolate/irish cream flavored creamer, then whipping for 4 more minutes. I had my doubts, but that's what the recipe said. Here is how that turned out: FAILURE!!!!
I then decided to follow the ingredients, but make it the way my baking instincts said would work. Ah, much better!
I also made chocolate peanut butter whoopie pies. Here is a close up. They are delicious. And the sugar will get you running circles for about an hour.
